Is Your Diet Leaving You Hungry?
I recently got my Micronutrient Test done and it tested 52 Vitamins and Minerals and 13 Amino Acids. As a Nutritionist I was surprised about the results. I consider my diet pretty healthy, but a lot of my vitamins and minerals were low. I’m constantly eating fruits, veggies and herbs. I focus on eating nutrient dense foods, but our food supply isn’t as nutrient dense as you would think.
It’s mostly about our soils. The truth is the soil is the most important part of the nutrition of a food. If the soil isn’t healthy and full of nutrients then the fruits and vegetables are not going to have anything to feed off of.
But that’s not what I wanted to talk to you about today. What I really wanted to talk to you about was my Vitamin K levels. I got my Micronutrient test done and my vitamin K is low. You might have heard people talking about Vitamin K because it helps Vitamin D absorb better. Vitamin K is very important for bone health and blood clotting and there are two kinds.
Vitamin K1 comes from dark leafy greens and Vitamin K2 is comes from bacteria in your gut. And then it gets tricky because Vitamin K can be broken down further to MK 4, which comes from animal foods like eggs and meat that are fed dark leafy greens and MK 7, which comes from fermented foods like natto. So, this is where my eggs come in.
After I got my Micronutrient Test done I went over the results with a Nutritionist from Cell Science and she told me Vital Farms eggs have more Vitamin K in them, specifically MK4. They are more expensive, but I bought them anyways and I accidentally came across how different they are than regular eggs. As you can see in the photo the color difference is wild. The organic eggs from Safeway are much paler than the Vital Farms eggs. Based on the color alone, you can tell they are richer in nutrients. This brings me back to my question: is your diet leaving you hungry?
My boss Mary Ann Simpson NP says that we are starving and we eat excess food because our foods are lacking in nutrients. It makes sense if something doesn’t have enough nutrients in it then we will need to eat more to get our daily requirement. Our bodies crave nutrients and so we eat more to fill ourselves up. The strange thing is that these eggs ARE more filling. And I didn’t even think about it until writing this article. They aren’t that much bigger than the organic ones I usually buy and I am so much fuller after eating them.
